Chocolate Chip Crunch Cookies

While I was at the beach, I read the Chocolate Chip Cookie Murder by Joanne Fluke. It was a very funny book with a bonus. It came with all the recipes mentioned in the story. I fell in love with the characters and the famous Chocolate Chip Crunch Cookies.

Chocolate Chip Crunch Cookies

Preheat oven to 350 F

1/2 cup butter (1 stick melted)
1/2 cup white sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 beaten egg (you can beat it with a fork)
1 1/2 cups flour (not sifted)
1 cup crushed corn flakes (just crush them with your hands)
3/4 to 1 cup chocolate chips

1. Melt butter, add in sugars and stir. Add soda, salt, vanilla and beaten egg. Mix the ingredients well.
2. Add flour and stir until ingredients are a cookie dough consistency.
3. Add crushed corn flakes and chocolate chips to dough and mix it all thoroughly.
4. Form dough into walnut sized balls with fingers and place on greased cookie sheet. (12 cookies to standard sheet) Press them down slightly with floured or greased spatula

Bake cookies at 350 degrees for 8 to 10 minutes. (I  found my cookies were done at about 6-7 minutes so just keep a watch on them) Cool on cookie sheet for about 2 minutes then transfer to wire rack. (The rack is important - it makes them crisp)

Yield: 3 to 4 dozen, depending on cookie size.
